When Do Countertops Get Measured in a Kitchen Remodel?

Quick answer
Countertops are measured after the cabinets are fully installed, level and secured to the wall, with the sink and cooktop physically on site. That measurement is called templating, and it cannot be done from drawings. Everything before it is preparation, and everything after it runs on a fixed schedule, so template day is the hinge the whole kitchen turns on.

Why we cannot template from the drawings
A kitchen on paper is square. A kitchen in a house is not. Walls bow, corners are rarely ninety degrees, and cabinet runs end up a fraction off the plan once they are shimmed into a real room.
Stone has no tolerance for that. A countertop cut from a drawing will sit with a gap along the back wall, or overhang unevenly, and there is no adjusting it afterwards. So we measure the room that exists, on the day it exists, with a laser template that captures the actual walls.
This is also why a quote and a template are two different things. An estimate tells you the range. The template locks the geometry.
What has to be ready on template day
Cabinets installed, level and fastened to the wall. Any island secured to the floor, not sitting loose. The sink physically on site, in its box, because the cutout is made to that exact model. The cooktop on site for the same reason. A farmhouse sink already set in its cabinet, since the stone is scribed to it.
Also decided by then: your edge profile, your overhang, whether you want a full height backsplash or a standard four inch, and how many holes the faucet and accessories need. Those are fabrication decisions, and after template they are expensive to change.
What does not need to be finished: paint, flooring, backsplash tile, and appliances other than the cooktop. Those all come later in the sequence.
The mistakes that cost weeks
Changing the sink after template is the most common one. The cutout is already cut to the old model, and a different bowl size means a new piece of stone.
Cabinets that are not level is the second. If the boxes move after we template, the stone no longer matches the room, and nobody finds out until installation day.
The third is quieter and more expensive: waiting for the backsplash tile before templating. Tile goes on top of the counter, so templating after it means either tearing tile out or living with a bad joint.
None of these are anyone's fault when the sequence is understood up front. All three happen when the countertop is treated as the last item on a list rather than a fixed point in the middle of it.

Two dates matter to everyone else on the job: template day and install day. Once cabinets are set and we template, the fabrication window is known, so the plumber and the tile setter can be booked with confidence instead of on standby.
For contractors and designers running a full remodel, that is usually the useful thing to take away. Give us the cabinets level and the sink on site, and the back half of the schedule stops being a guess.

Yes. The sink cutout is made to the exact model, so the sink needs to be physically present at template. The same applies to the cooktop. Changing either one after template usually means re-cutting stone.
Do I need the backsplash tile done before countertops?
No, and you should not. Backsplash tile is installed after the countertops, because it sits on top of them. Templating after the tile is already up leads to a poor joint or to removing tile.
Do you remove the old countertops?

A licensed plumber. Premier Marble Kitchens fabricates and installs the stone and mounts the sink to the countertop, but we do not perform plumbing work. Your plumber handles the disconnect before and the reconnect after, once the adhesive has cured.
How long between template and installation?
At Premier Marble Kitchens the full process runs 1 to 3 weeks. Your existing counters can stay in place while your slab is being fabricated, so you keep using your kitchen until installation day.
